What is the Caluga Farm Ledger?

The Ledger is our way of offering beef the way it’s meant to be sold — directly from our farm to a limited number of households.
Joining the Ledger secures your place to receive a share of our monthly Caluga Farm beef harvest. We only raise and finish a finite number of animals each season, so access is intentionally limited.

What am I signing up for?

You’ll receive a confirmation email with everything you need to know, including delivery timing and what to expect next.

Is this a subscription?

It functions like a subscription, but we prefer to think of it as an allocation.

You receive a monthly share of our beef as long as you remain on the Ledger — with full flexibility to pause or cancel at any time.

Can I buy beef bones and organs

Yes, ledger members will have the option to add marrow bones, soup bones and organ meats based on availability. We'll send an email when we know how much is available and you'll be able to add it to your order.

What sizes are available?

You can choose between:

4kg monthly share – ideal for individuals or couples

8kg monthly share – ideal for families or households that eat beef regularly

Each box is thoughtfully curated to represent the whole animal.

Can I pause or cancel?

Yes — at any time.
There are no lock-ins, no penalties, and no minimum commitments. You’re free to pause or step away whenever you need.

Is shipping included?

Yes.
All Ledger orders include free refrigerated shipping to your door.

Where do you deliver?

We deliver to most locations across Australia where refrigerated courier services operate.

What makes Caluga Farm beef different?

Is your beef organic?

We follow organic and regenerative principles but aren’t formally certified.
Instead, we focus on transparency, stewardship, and producing exceptional beef.

What cuts will I receive?

Ledger boxes change month to month, reflecting the animal and the season.
You’ll receive a balanced mix of:

Steaks

Roasts

Mince

Slow-cook cuts

This approach allows us to honour the whole animal and deliver consistent quality.

Can I pause or cancel?

Yes — you’re always free to pause, skip, or cancel your Ledger membership before your next billing cycle.

If you need a break, skipping a month or two is often the best option and allows you to keep your place on the Ledger while life settles. You will also have the option to gift your box to someone if you need to skip a month.

 

If you choose to cancel, your allocated place is released and offered to the next household on the Ledger waitlist. Should you wish to rejoin in the future, you’re very welcome — you’d simply re-enter the waitlist and be invited again as space becomes available.

 

This approach helps us manage a finite harvest fairly, while keeping the Ledger flexible and human.

Why is the first box more exspensive?

The first Ledger box includes one-time setup, onboarding, and handling costs that don’t apply to future deliveries. All boxes after your first are charged at the standard Ledger rate.

This one-time price difference helps cover:

Initial processing and setup costs

Premium packaging for first deliveries

Member onboarding and Ledger administration

Any included welcome materials

From your second box onward, pricing returns to the standard Ledger rate.

 

This additional cost doesn't apply on seasonal pricing.

Do you include sausages in your packs? What ingredients are in them?

Yes - sausages are occasionally included as part of some Ledger boxes, depending on the month and the balance of the animal.

Our sausages are:

Gluten free

Made from quality beef and beef fat

Simply seasoned, with no fillers or unnecessary additives

Ingredients:
Beef, beef fat, rice flour, salt, mineral salt, spices, spice extract (160c paprika extract for natural colouring).

Like everything we produce, sausages are made to use the whole animal well, without compromising on quality.
